Strawberry Buttermilk Muffins

This weekend, I tried a new muffin recipe from Žena a život magazine (it is not on the website yet, because it is from the current printed issue). I modified it for wholegrain flour and had to make it twice, because I don´t think the original recipe was actually well tested. Still it might be just A TAD on the dry side, so next time I make it, I will put in more fruit or maybe even mix 2/3 wholegrain and 1/3 all-purpose flour.

Here however, is today´s breakfast 🙂

So, for these 12 you will need to mix these dry ingredients:

  • 2 cups of wholegrain or all-purpose flour, or a mix of these two (can be partially replaced with cocoa or ground nuts)
  • 1/3 cup Dry Demerara sugar
  • 12 g baking powder

Also mix the following:

  • 125 g butter, melted
  • 2 eggs
  • 3/4 cup buttermilk (can be replaced with milk or coconut milk)
  • some vanilla extract

Mix the wet with the dry and add 1 cup of diced strawberries or, indeed, any other berries, apples, pears, bananas, chocolate chips, tangerines…

Divide it into 12 muffin cups in the muffin tin, remember to only fill them for about 2/3, as the muffins grow. Bake it on 180°C for about 25 minutes, then let it cool and enjoy!
