This is a delightful treat! The cream is rich and decadent, the crust is delicate and sweet, the tart fruit adds a bit of surprise to the mix. Make it in advance for your guests or family and have vanilla-smelling kitchen for days 🙂
This is, once again, made following my favourite book.
For the pastry you mix the following ingredients:
- 250 g fine flour
- 70 g confectioners sugar
- 1/2 tsp baking powder
- some vanilla extract
- pinch of salt
- 125 g butter
- 1 egg
Make soft, smooth dough and divide it in half. Grease 26 diameter cake tin with butter and roll out 1/2 of the dough to fit the bottom. Make a long roll out of the other half, place around and the sides of the tin and press to make sides of the pie.
Preheat your oven to 175°C and prepare the cream filling.
Whisk together
- 3 eggs
- 2 Tbsp fine flour
- 1 packet vanilla pudding mix (I use this one)
- 4 Tbsp milk
In another dish, mix together
- 240 ml milk
- 250 ml whipping cream
- 60 g butter
- 70 g sugar
Bring to a boil and pour in the vanilla pudding mixture. Stir very well until it thickens.
Cut up approx. 500 g of plums or some other fresh fruit, preferably something a bit tart and lay it on the bottom of the pie crust. Carefully pour the cream over it, put it to the oven and bake for about 50 minutes, until very well set. Refrigerate overnight and enjoy!
