I kid you not, these are not only extremely yummy, but also full of healthy ingredients. Also, it is a very simple recipe and can be “customized” in a hundred and one ways! AND on top of all that, they are better day by day and freeze well 🙂
It is a modification of this recipe, and what you are going to need is as follows:
- 400 g finely grated carrots
- 280 g wholegrain or all-purpose flour
- 100 g sugar
- 2 eggs
- 1 sachet of baking powder (12 g)
- 150 ml oil
- 150 ml milk or buttermilk
- some vanilla extract
Mix it all up and put into a baking tin lined with baking paper. Preheat the oven for 180°C and bake for about 30-35 minutes until it is nice and orange. A stick should come out dry.
You can take this recipe as a blank slate and add raisins, crushed nuts, chocolate chips or top it with your favorite icing or topping. I suppose it wold work in muffin tins as well. I love mine for breakfast with fresh strawberries and buttermilk.
